Homemade Funfetti Cake

Good Evening,


I am so excited to share with you my newest love, which is baking. This Christmas I received a Kitchen Aid Mixer from my dear in-laws and I can't believe how much it's already saving my sanity. I'm in love...I foresee a lot of baking in my near future. After Christmas, another wonderful holiday comes around, my wonderful husband's birthday. This year my husband (Travis) turned on the higher side of the "20's". It's so insane to me that this is the 5th birthday we have celebrated as a couple. Time flies when you're having fun. My husband is really great and I thank God everyday for him. Anyways I asked Travis what kind of cake he would like this year (Funfetti was his choice) since in the past I usually would do something simple. So here is my delicious creation of homemade Funfetti cake and also homemade icing (I will be adding in a later post) too. Homemade is the way to go!

Funfetti Cake

Melts in your mouth..
Ingredients:
  • 1 and 2/3 C all-purpose flour
  • 1/2 Tsp baking powder
  • 1/4 Tsp baking soda
  • 1/2 Tsp salt
  • 1/2 C (1 stick) unsalted butter, melted
  • 3/4 C granulated sugar
  • 1/4 C light brown sugar (this is the trick for keeping the cake moist)
  • 1 large egg
  • 1/4 C greek yogurt or sour cream 
  • 3/4 C milk (soy or almond also optional)
  • 1 TBSP vanilla 
  • 2/3 C sprinkles (rainbow is shown above, stay away from nonpareils they will bleed)


Directions:
  1. Preheat oven to 350F degrees and spray 9-inch cake pan generously with nonstick spray.
  2. In a medium bowl mix together flour, baking powder, baking soda and salt. 
  3. Meanwhile in large bowl melt butter in microwave then mix in sugars removing all lumps. Then add in egg, yogurt, milk and vanilla until combined.
  4. Slowly mix in dry ingredients.
  5. After all lumps are evenly mixed, mix STIR in sprinkles very carefully.
    First attempt with nonpareil sprinkles was a good bad idea
  6. Pour in cake batter into prepared pan. Bake between 33-37 minutes. Use toothpick to test the cake by inserting in the center (toothpick should be clean when removed).

  1. Allow to cool.
This was Barry approved! See don't be afraid to do homemade just because of a few extra ingredients, it's much more satisfying. Hope you all stay warm the rest of the week and remember not to leave your pets outside too long even if they like to play in that fluffy stuff. It's about to get very cold out there. 

I guess that makes one Barry happy about the pitiful amount of snow we got.
