Sloppy Joes

Happy Saturday!
I am starting quick and easy for my first food blog post. Cooking is a passion I have discovered before I was married. Believe it or not I literally taught myself how to cook. Cooking always seemed so complicated and time consuming before I really got my hands dirty. There are so many great benefits to cooking. For instance it's usually healthier than most fast food restaurants, you can also freeze for a later time or just have leftovers for the duration of the week. So let's get started.

In the past we have bought the packaged sloppy joe "seasoning mix". After opening my cookbook and discovering I had all the ingredients already in my kitchen, I decided to whip up this yummy, easy recipe. 


Here is what you need:
1 lb lean (at least 80%) ground beef
1 medium onion, chopped (about half cup)
1/4 C chopped celery (I did not add this)*
1/4 C ketchup
1 TBSP worchestershire sauce
1 TSP ground mustard
a dash of pepper
Hamburger buns (We prefer honey wheat from Kroger)
Sliced cheese (we used swiss, not pictured)*

*Optional
Lighter version substitute 1lb ground turkey
  1. Chop medium sized onion or throw in your ninja and pulse a few times

  3. In medium sized skillet combine chopped onion and beef over medium heat 8-10 minutes. Stir occasionally, until beef is brown; drain
  4. Stir in remaining ingredients (except buns). Heat to boiling; reduce heat. Simmer uncovered 10-15 minutes, stirring occasionally, until vegetables are tender.
  5. Fill buns with beef mixture and add cheese (optional) and enjoy!
Yum

- Serve with waffle fries and choice of veggie to complete your meal. :)
That's it easy and fast. Total time about 25 minutes. Save leftovers and eat for lunch the next day!
