Cowboy Casserole
This dish is incredibly satisfying and fairly healthy (lots of protein), It serves six but we ate most of it last night and finished off the leftovers tonight. I came across this dish on Pinterest (big surprise) and so glad I did. My hubby even thought it was a big hit. I am so glad to have my own food critic to tell me when things are "actually" delicious. This is my first post using complete "Manual" for every picture. I love the fact that in just a few short months I am mastering how to take pictures and absolutely loving it. :) I am the photographer and don't need "auto". I love this dish and plan on adding this to our regular menu in our household.

Calories: 288 per serving
Ingredients:
1/2 C onion (chopped)
1 T minced garlic
1/4 C bell peppers (optional)
1 C salsa
1 C frozen corn
1/2 C shredded cheese
1 package cornbread mix
1 egg
1/3 C milk
Step by Step Directions:
1. In large skillet, brown beef with garlic, bell pepper and onion.
2. Add salsa, corn and beans.
Simmer for 2 minutes then remove from heat.
3. In bowl, mix cornbread as directed using the egg and milk.

5. Top with cornbread mixture, spreading as much as possible.
6. Bake at 350 degrees for about 20 minutes. It should be a slight golden brown.

It has been such a crazy spring here at the Barry household. I have successfully thrown two baby showers, attended a birthday party for my niece, taken maternity pictures and a lot of traveling in between. It's been crazy but I am so thankful for each and every person in my life. It might be hectic at times but it's "My Crazy Barry Life" and I wouldn't trade it for anything.
